Farro with Corn and Ceci
Ingredients:
1.5 cup dried farro
2 ears corn, cooked and kernels removed
1 can Ceci
1 jar artichoke hearts, chopped
I large shallot chopped fine,
Olives (optional)
Parsley to taste, also chopped fine
Dressing: Olive oil/ white wine vinegar/ pinch orgegano/ salt/ pepper
Directions:
Boil water, add salt,
When boiling, add farro and cook till done (about 8 minutes)
Drain 1 can Ceci
Chop artichokes and shallots and parsley
Drain farro
Combine all ingredients and add dressing
