The chef and restaurateur who has built an acclaimed portfolio of mostly Italian restaurants in the Washington DC area is betting big on pasta in Boca Raton, FL
Acclaimed chef and restaurateur Fabio Trabocchi is spreading his roots in South Florida. His Washington DC-based restaurant group recently announced a massive new project set to open this fall in Boca Raton, FL.
Fiolina Pasta House Boca Raton will be a multi-purpose 7,000-square-foot space housing a restaurant with glass-enclosed kitchen, a pasta room where diners can watch fresh pasta being made, a charcuterie station, indoor and outdoor bars, and more. A release from Fabio Trabocchi Restaurants notes that the new project takes inspiration from the group’s Sfoglina concept, which has spawned three locations in the DC area.
Along with the announcement, Trabocchi revealed that he will relocate his family to the Boca Raton area. He continues to run six restaurants in and around Washington DC, including Italian fine dining standouts Fiola and Fiola Mare. There is also a Fiola Miami in the Coral Gables, about 50 miles away from where Fiolina Pasta House will be located.
Trabocchi, who grew up in Le Marche and studied cooking in Senigallia on the Adriatic coast, went on to cook in Moscow, London and New York, where he earned a 3-star review in 2007 from The New York Times at the late, great Fiamma before deciding to move to Washington DC to open Fiola, his first restaurant, in 2011.
Now, he’ll branch out yet again, promising “a hearty, diversified menu of modern Italian cuisine influenced by neighborhood locales in Bologna, Rome, Le Marche, Abruzzo and the Amalfi Coast,” according to a release.
When it opens Fiolina Pasta House will join an improving restaurant scene in Boca Raton, where the Major Food Group—the force behind the growing Carbone empire—has an upscale Italian concept, Principessa Ristorante, at The Boca Raton resort. Fiolina will be located at 5355 Town Center Road in Boca Raton.
