In late October, the rolling hills of Monferrato transform into a patchwork of crimson, ochre, and gold. As mist settles into the valleys, Piedmont’s kitchens come alive with the rich aromas of white truffles, slow-simmered ragù, and poured Barbera d'Asti. Join a local Monferrato trifolao and a Milan-based culinary guide for three days of autumn indulgence in one of Italy’s most enchanting gastronomic regions.

Your journey into Monferrato begins as the paved highways give way to winding countryside roads that trace the contours of gentle, vineyard-clad slopes. Arrive in the morning, climbing a hill to a castle perched above the atmospheric nebbia, which nourishes the region’s prized vineyards and mysterious woodlands. Take to the halls of Castello di Montalero, the elegant 18th-century manor playing host for the weekend. Framed by panoramic views, historic rooms are restored with modern comforts, a pool, and a gym. The first day is marked by discovery: rich history, family traditions, and exceptional food. A classic Italian aperitivo and seasonal dinner celebrating the land are the evening’s mentors.

On the second day, arise above the panoramic vineyard landscape with church bells and the golden autumn sun. Senses begin to awaken at the historic Casale Monferrato Friday Market, where you will select ingredients from the season’s greatest treasures: hazelnuts, artisanal cheeses, mushrooms, pumpkins, and chestnuts. After a local lunch, plunge into a UNESCO heritage wine cellar to savor the ancient wares. Equipped with treasures of the land, embark on a hands-on cooking class with the executive chef for dinner.

The final day explores the terroir itself: the groves, meadows, and stone that built Monferrato’s UNESCO heritage. Discover the secret world of truffle hunting, accompanied by an expert local trifolao and her keen-nosed family dog. A walk through the quiet forest floor reveals the elusive white truffle. Return triumphant for a handmade pasta lesson that puts the classic regional recipes in your hands, along with a glass of vibrant wine for a toast over the farewell lunch.
